What do you eat when you’ve eaten ALL the things?

Let me back it up: this past weekend, I – along with 4 of my closest girlfriends from high school – celebrated my BFF’s bachelorette party in Newport, Rhode Island.

These are girls I’ve been friends with through middle school soccer matches, braces, crushes on JT (when he was part of Nsync, no less), our first illicit sips of alcohol, SAT prep courses, and failed driving tests.  These are women who are now nurse practitioners, mothers, camp directors, veterinarians, and major event planners.  Um, when did that happen?

Still, despite the two decades that have passed since our first overtures of friendship, there are quite a few things that haven’t changed.  One – these women are all (still) amazing.  They are honest, warm, loving, and these-are-tears-from-laughter-hysterical.  Two – we all (still) can house a bag (or two or three) of Costco-sized Sour Patch Kids, top it off with a bag of chocolate covered pretzels, and drink a couple bottles of champagne.  Sorry we’re not sorry.

I’m learning the hard way today: just because you CAN do it, doesn’t mean you should.  We’ll be trying to eat a few fruits and vegetables this week, to compensate.

Tonight/Monday – Swiss chard & gruyere frittata

Tuesday – book club!

Wednesday – smoky chard & farro soup

Thursday – tortellini

Friday – soba noodle salad

PS: As part of the bachelorette, we took a cooking class & made ricotta cheese and gnocchi.  FROM SCRATCH.  I am STILL so impressed that I will try to post those recipes this week, as well.
