This weekend was exactly what the doctor ordered. Sleeping in with the Hubs, drinking lots of wine, eating lots of chocolate. Unlike last weekend, when I honestly couldn’t fathom one more week of winter, I’m looking forward to the predicted snow (is our snow day coming, at last!?) and to making some more stews. Immersion blender, here we go.
Monday – split pea soup
Tuesday- leftover pappardelle with garlicky leeks (I made this Sunday but won’t be posting the recipe; I have to tweak it more before I can be satisfied with it.)
Wednesday – quick & easy enchiladas
Thursday – leftovers
Friday – dinner out
I also baked last night, and will be posting that recipe soon. Spoiler: I’m no baker, but this will definitely become a go-to.
