This is a “short” work week, given yesterday’s day off. However, it’s also the first week since beginning this blog that we’ve had plans to host friends for dinner, so I had to give some thought to that prior to grocery shopping last night. What is the best way to put a tasty meal on the table when you do not have much time at home to prepare? In our house, the answer is almost always: the crockpot.
The Menu
Monday – Wild Mushroom and Shallot Quiche
Tuesday – Leftover and/or salad from the contents of our fridge
Wednesday – Hosting friends for dinner – Slow Cooked Pork with Greens, Onions and Mozzarella
Thursday – leftovers (if there are any!)
Friday – Black Bean Cakes with Cilantro Cream Sauce
Saturday/Sunday – We’ll play this one by ear. With plans for both days (trapeze! a 5k!), we’ll need to be well-fueled…just not sure yet from where that fuel will come.
