This week will be a light one in the kitchen. Between last night’s excellent dinner at Kate’s, our upcoming “parents’ weekend” – my parents, my husband’s parents, and the two of us will be spending the weekend in my husband’s hometown – and the leftovers from last week, we probably only need two nights’ worth of meals. And since the husband will probably be at work late at least a couple of nights – meaning he’ll have greasy burgers for dinner – I want to try to incorporate some nutritious, vegetarian fare. (I’m sure that’s just what he wants to hear.)
Monday – Lentil Soup with Swiss Chard
Tuesday – leftovers…
Wednesday – Mushroom and Gruyere Quiche
Thursday – leftovers…
Friday – whatever delicious meal my mother-in-law cooks up!
